Because a VP of a company NEVER would be allowed to serve other company! Especially when

a company may/will have direct business relationship with its competitors for the similar line of the products.

I think the presence of Tony means that Apple wants to watch very closely Poet's progress, and

Tony's advice in future will be one of the basis that Apple will make decision on to finalize a deal with Poet.
